Freshly harvested Drumanilra Organic Farm Potatoes are delicious simply seasoned and drizzled with butter or oil after draining. However, we love to experiment with new flavours and combinations here. We thought we would share some of our favourite recipes that add a little extra something to impress your family and friends.

All Recipes Use 750g Organic New Potatoes and Will Serve 4-5
Pesto Potatoes with Oven Dried Tomato and Home Made Pesto
Place Drumanilra Cherry Tomatoes on a baking tray, drizzle with olive oil, season and bake in the oven for about 25 minutes at 190 C. Scrub potatoes with the skin on and cut into 3cm chunks. Cook your potatoes in a pan of cold salted water, bringing to the boil, then simmering for about 10 minutes. Once the potatoes are tender, drain them, add in some pesto, the tomatoes, and finely sliced onion. You can use any pesto, but for extra points, (and taste!), why not try our recipe for Home Made Pesto using organic Basil from the Drumanilra garden. It’s super easy – just blitz, basil, garlic, olive oil and a nut of your choice (cashew and pine nut are both good – toast them on a hot frying pan first) in a blender until smooth and Hey Pesto 😊! Herby Roast Potatoes
Cut the potatoes into quarters then toss in good quality olive or rapeseed oil, sea salt, cracked black pepper, Rosemary, and Thyme. Place in a shallow roasting dish, add a handful of garlic cloves, dotted around the dish. Roast in an oven that has been preheated to 180°C, for 20 minutes.
Organic Potato Summer Skewers
A couple of hours before eating, marinade a pack of Drumanilra Dexter Diced Beef Cubes in a couple of splashes of Balsamic Vinegar. Cook your potatoes in a pan of cold salted water, bringing to the boil, then simmering for about 10 minutes. Once the potatoes are tender, drain them, and allow to cool slightly before cutting into 3 cm cubes. Slice Courgettes into 1 cm slices and then thread Beef, Courgette Slices, Cherry Tomatoes and Potatoes Cubes on each skewer. Brush each skewer with olive oil, season and cook on the BBQ for about 10 minutes.
One-Pot Baked Chicken Casserole with Organic Potatoes
Preheat the oven to 200° C. Wash the potatoes carefully, leaving the skin on, and chop into quarters (or roughly 3 cm chunks). Peel and chop one onion and 2 red peppers into segments. Arrange 2 packs of Drumanilra Organic Chicken Thighs or Drumsticks in the bottom of a shallow ovenproof dish, skin on and bone in. Add the potatoes, chopped vegetables and some cloves of garlic. Scatter some cherry tomatoes over the dish, add olive oil, salt and pepper and some basil leaves. A few slices of good quality chorizo would add extra flavour to your dish, or sprinkle with paprika. Stir to combine and cook for about 1 hour or until the potatoes are browned and the chicken is cooked through. If the casserole hasn’t browned on top, pop under a grill for the last 10 minutes (or turn your oven to a grill setting if you have one). Watch carefully so it doesn’t burn! Serve straight from the tray!
Minty Mayo Potato Salad
Cook your Potatoes and allow to cool, before cutting each into 3cm chunks. Mix 2 tsps. Dijon Mustard, 50ml Mayonnaise, 2 heaped dessert spoons Chopped Mint, juice of ½ a Lemon, Salt, and Pepper together in a large bowl. Add the potatoes and stir to combine.
