This weekend get out there and enjoy BBQs with friends and family. But where to start? Our handy BBQ guide gives you recipes and all the BBQ essentials so that you can have everything covered.

The Veggies – Organic Of Course!
Here’s two brand new recipes for you to try on the BBQ, everything you need is in store, including organic Little Gem lettuces and Romano Peppers.
Romano Peppers Stuffed with Goats Cheese
Ingredients:
- 2 Romano peppers
- 1 tub Goat’s cheese (we love Leitrim Hill Creamery‘s Goats Cheese!)
- A few sprigs of thyme
- 1 rosemary sprig
- salt and pepper to season
- Olive oil
- 4 Cherry tomatoes, sliced
Method:
- Preheat the BBQ until there is no flame on the charcoal.
- Cut a slit in the middle of each Romano pepper and open it wide.
- Brush olive oil all over the Romano Peppers generously.
- Fill each one with Goat’s cheese.
- Add a few sprigs of thyme and rosemary in each one.
- Place on a foil lined baking tray.
- Arrange the sliced cherry tomatoes around the Romano Peppers.
- Drizzle each slice with olive oil and place a couple of rosemary leaves on each one.
- Roast on the BBQ for 10 – 20 minutes.
- Enjoy with some nice wine!
*These can also be prepared in the oven for 20 minutes at 200 degrees – in case the BBQ is full or the weather isn’t kind!
Barbecued Gem Lettuce
Ingredients
- Little Gem Lettuces, sliced in half lengthways
- Olive Oil
- Salt & Pepper
- Gran Gran’s Chimmichurri sauce to serve (optional)
Method
- When your barbecue is ready for cooking, brush the cut side of the lettuces with a little of the oil and place on the hot grill. After a minute or so, turn them over.
- When the lettuces are nicely charred and slightly softened, transfer to your plate and sprinkle with some salt and pepper.
- Trickle over a little oil and serve.
