How it all started
When Liam and Justina Gavin were imagining their new organic restaurant business, they knew some things for certain; they would promote local, organic, sustainably produced food; they would use meat and veg from their own home farm; and they also knew for sure that they would need great breads to go with it – burger buns, breads, pastries, free-from options and tasty sweet treats. So they decided a brand new bakery would be the best way to go.
So the hunt for a space and a Head Baker began in 2020. With the pandemic, this all took time, but sure enough, they met Michael. Michael is originally from Leipzig in Germany and has baked and travelled all over the world. Michael moved to Ireland with his family in September 2021 and got to work developing the site. His team, Liviu and Jurga joined soon after.
We named our bakery Carraig Rua – meaning Red Rock. It’s named after the location of the farm and the hot stones in our ovens.
A passion for baking
Our team in Carraig Rua are passionate about their work. They hand craft each loaf using only the best ingredients; organic and premium flour, free range eggs, real butter, organic fruits and more.
Every day our team work on their signature bakes; including 48 hour-fermented sourdough loaves, rye breads, gluten free and vegan breads and sweet treats including cinnamon rolls, baked cheesecakes and gooey chocolate brownies. They start their craft before 5am every morning, so that our restaurants and Farm Shops have their rolls, breads and cakes delivered by opening time.
