Incredible Health Benefits of French Beans: A Nutritional Powerhouse

Thanks to Raluca Tuluianu, our Market Garden Assistant for putting together the following piece for our blog:

French beans, also known as green beans or haricot verts, are a versatile and nutritious vegetable with numerous health benefits. These low-calorie vegetables are rich in essential nutrients, such as dietary fibre, vitamins A, C, and K, which protect the body against free radicals and strengthen the immune system. French beans promote digestive health and contain a soluble fibre called pectin, which acts as a prebiotic. They also support heart health by reducing cholesterol levels and providing potassium, which helps regulate blood pressure and maintain a healthy heart rhythm.

These beans also help manage blood sugar levels, with soluble fiber slowing glucose absorption, preventing rapid spikes in blood sugar levels and reducing the risk of developing type 2 diabetes. They also provide antioxidant support, such as flavonoids and carotenoids, which help combat oxidative stress and protect against chronic diseases. They enhance bone health by containing essential minerals like calcium, magnesium, and phosphorus, which promote bone density, strength, and integrity. French beans are a nutritional powerhouse contributing to overall well-being and culinary adventures.

Recipe: Parmesan-Roasted French Beans

1 egg

2 tbsp olive oil

1 tsp onion powder

½ tsp salt

¼ tsp pepper

400 g fresh French Beans (a.k.a. Green Beans)

30 g shredded Parmesan cheese

Instructions

Preheat the oven to 200°C. Whisk together eggs, oil and spices in a bowl. Add the beans and stir until all of the French beans are covered with the egg batter.

Remove excess liquid and add the parmesan cheese and stir well.

Spread the beans on a baking sheet lined with parchment paper. Bake on upper level in the oven for 15–20 minutes or until the beans have turned a nice color.

Tip!

Make sure the beans are fully coated with butter and in a single layer on the baking sheet. For a crispier texture, put the empty baking sheet in the oven for 5-10 mins before baking the beans.
