It’s basil season and our freshly picked organic basil pots are available now in our farm shops!
We’ve been harvesting fresh basil this week from the polytunnels and the smell is incredible! Basil is such an easy little herb to grow at home and our growing pots are just the thing to keep on a sunny windowsill. It’s most commonly used in Mediterranean food but is also popular in Thai recipes, with it’s sweet but strong flavour and aroma.
Pick fresh basil leaves from their stalks and scatter whole, or roughly torn, over pasta dishes. Try our recipe below for making a delicious pesto to dip your bread into or use as a spread for sandwiches or over freshly cooked pasta.
This basil pesto recipe has a delicious flavour and home made from fresh will taste so much nicer than a supermarket jar. Just grab some organic basil from Honestly Farm shops, pine nuts, garlic, parmesan, and extra virgin olive oil and you’ll have a delicious pesto on the table in under 10 minutes. All you really need to enjoy is a loaf of Carraig Rua bakery’s organic sourdough bread.
- Ingredients:
- 2 cups packed basil leaves
- 1 to 2 clove garlic, chopped
- ⅓ cup pine nuts or walnuts, toasted
- Juice of ½ lemon
- ½ cup extra virgin olive oil
- ½ cup finely grated Parmesan cheese
- Salt and pepper
Method:
Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally. Put into a food processor with the basil, parmesan, olive oil and garlic cloves. Whizz until smooth, then season to taste.
